Gary takes a rare moment to rest in Oman

On Saturday, January 15, as I watched Gary coughing so horribly, struggling to breathe with a high fever and intense pain, I started thinking about all the stress and difficulties we put on ourselves for the sake of a cause and a desire to give the world something better. At that moment it didn’t seem like a very good trade.

Ever since we moved to Ecuador five years ago, Gary has been fascinated with the jungle. He loved the discovery of the unknown and was excited about finding new aromatic plants. I knew he was careful about what he ate and drank, but I was always concerned because I knew the jungle was full of attacking critters and infectious dangers.

But Gary was fearless as his unconquerable spirit led him deep into the Amazon without worry for what could be in his path. He always came home with different kinds of bites that usually itched like crazy, but never more than that. I have experienced this with him time and time again!

In Gary’s words: “On Saturday, January 15, I flew home from Idaho, where we had begun our harvest of the balsam fir. I had developed a horrible, gut-wrenching cough; high fever; and extreme fatigue. During the night I had extreme difficulty breathing, and when I was in bed, I felt like I was drowning and had to resort to trying to sleep in the recliner.

“I could tell it was getting worse, so I decided to have Mary take me to the Emergency Room at the American Fork Hospital with the intent of getting oxygen and finding out what was happening to me.”

He received a lot of help, and they were able to open up his lungs a bit so that he could get more oxygen and relieve his pain.

However, they could not find out what was wrong. The tests contradicted each other, came up negative, and left them baffled. The doctor, who we feel was very competent, determined that he had viral bronchitis and double pneumonia. But because Gary had been in the Amazon and in so many other places in the world, they were convinced that some exotic jungle disease was the cause of it all; so the doctor decided to send him to the Infectious Disease Department of the University of Utah Hospital.

Young Living members already know that Young Living Therapeutic Grade™ (YLTG) essential oils are the highest quality and most therapeutic. But achieving this high standard requires years of experience from experts like Gary Young, and results in part by farming and distilling many of our own essential oils. Even our four farms aren’t big enough to produce all the oils demanded by our customers, not to mention that some products only grow in unique, remote climate regions (i.e. frankincense only grows within specific areas of the Middle East). So to maintain YLTG standards—no matter where an essential oil is grown or distilled—our experts apply the lessons learned on Young Living farms to make personal, on-site visits across the globe, ensuring that partner growers and distillers meet our world-class standard.

Once the oils are sent to our research center in Spanish Fork, Utah, we determine which oils qualify for the YLTG requirements through a multi-step process that consistently delivers superior products. Part of this process involves scientific purity tests. The research center experts run every batch of essential oils through seven technical tests that determine if an oil qualifies to be a YLTG product.

The first test is called Gas Chromatography (often referred to as GC). The GC test measures the individual chemical components of an essential oil by sending samples through a metal tube. As the oil spirals around the tube, it begins to “flash off” or evaporate. The evaporation points of each chemical are measured and compared to the YLTG specification standard for that oil. If components of that oil don’t measure up, the entire batch is rejected. That’s good news for Young Living essential oil consumers, but bad news for unsuspecting buyers elsewhere. That’s because partner distillers who don’t meet the YLTG qualifications take their rejected oil and sell it to other essential oil companies with lower standards.

In future blog posts I’ll review the other six tests Young Living uses to qualify its YLTG essential oils. Knowing and understanding these purity tests will give you added confidence that Young Living truly is the world leader in essential oils.

So far 2010 has been one of my best starts ever! I have great friends and I know which changes I want to make throughout this new year. Each year we all have things we would like to improve, and for many of us, that project/target/mark (I hate the word goals) is achieving a healthy weight. Luckily, Young Living is here to help with great nutritional products, and

Balance Complete™ is a perfect way to overcome our battle with excess eating and to reach that mark we have set.

Balance Complete is a daily meal replacement that has 11 grams of fiber per serving. Most adult women should consume at least 20 grams of fiber a day; men should shoot for at least 30 grams. Fiber is an important part of any weight management plan because it expands when combined with water, which makes you feel fuller. For me that is important because I love to munch on all sorts of foods. Even though I’ve been good at trying to satisfy my cravings with healthy foods, I realize that I get the munchies too often! The good news, though? Now that I’m using Balance Complete, I feel full longer and have been able to reduce my overall calorie intake.

While working at Young Living I have found a few things that might help out while taking Balance Complete. For you first timers, I would suggest that you mix a scoop of Balance Complete with a scoop of Power Meal™ or Pure Protein Complete™ until your body can adjust to all the fiber that you will be taking in.

Another tip is from www.livestrong.com. I have never been much into calorie counting, but decided to see how much I really eat during the day (I now know why my pants were becoming a little snugger!). I have started tracking my “daily plate” and found that it keeps me inline with the target I have set for myself. Conveniently, Balance Complete is listed on their daily plate. Young Living has a great selection of natural skincare products that will help invigorate your complexion. Products like our ART® Skin Care System and Satin Facial Scrub™ Mint are free from harmful chemicals and reap health benefits that go way beyond just skin deep.

To complement your skincare regimen, make sure you are giving your skin the nutrients it needs. Try including these foods as part of your healthy diet:

» Almonds

Almonds are stuffed with vitamin E, a potent sun blocker. Vitamin E acts an antioxidant that helps protect skin from UV light and other environmental factors that generate cell-damaging free radicals. Consuming about 20 almonds a day will boost your skin’s natural defenses.

Possible substitution: Two tablespoons peanut butter or a half cup of broccoli.

» Carrots

Carrots are packed with vitamin A, which is good for clearing up breakouts. It helps reduce the overproduction of cells in the skin’s outer layer were dead cells and sebum can clog pores. Add nibbling on half cup of carrots a day to your snack routine and reap these benefits!

Possible substitution: One cup milk or one slice of cheddar cheese.

» Dark Chocolate

As if we needed another reason to eat chocolate! Flavonols, the antioxidants in dark chocolate, can reduce roughness in the skin and protect against sun damage. It only takes a few ounces a day to get this antioxidant in your system—what a sweet benefit!

Possible substitution: Blackberries, cherries, blueberries, or raspberries (although you would have to eat a large amount).
» Flaxseeds

These seeds contain omega-3 fatty acids, known to diminish age spots and erase fine lines. Consuming just over two grams (just a teaspoon) will help prevent irritation and redness in the skin as well as contribute to better hydration. Try just sprinkling a teaspoon over oatmeal or veggies to get your daily dose.

Possible substitution: Flaxseed oil (1 tablespoon with sautéed veggies), salmon (4 ounces), or walnuts (1 ounce or about 14 halves).
» Green Tea

When green tea is hot, it releases catechins, a type of antioxidant that has anti-inflammatory properties. These antioxidant powers fade as it cools, so drink it while it’s hot. Only two cups a day will help cells’ resilience to sun damage, and may even help reduce sun damage.

Possible substitute: White tea.

Lips are not only front and center on your face, but they are also one of the sensitive parts of your body. It’s no secret that when your lips are healthy they give a boost to your appearance; but when they are dry and chapped, they command all the wrong kind of attention.

Young Living Shares Essential Oils at Prestigious Conferences\

Last month I had the privilege of introducing Young Living Essential Oils to thousands of people in Southern California at both the Women’s Conference and the TEDMED Conference.

My journey started at the 24th annual Women’s Conference, where over 14,000 attendees gathered to be inspired by the likes of Maria Shriver, Arnold Schwarzenegger, Michelle Obama, Dr. Jill Biden, the Honorable Sandra Day O’Connor, former Associate Justice the Honorable Ruth Ginsburg, Erin Brockovich, and Pulitzer Prize-winning and National Book Award-winning poet Mary Oliver, among many others. The central theme was “Empowering women to be architects for change,” and the energy of inspiration and possibility was truly palpable.

Also speaking at the Women’s Conference was fashion designer and philanthropist Donna Karan. Donna’s commitment to philanthropy and global healing led her to found the Urban Zen Foundation, an organization that brings together like-minded people and organizations to define solutions and implement action in the areas of well-being, empowering children, and preserving culture. Young Living has partnered extensively with Urban Zen for the past two years, working to bring the healing power of essential oils to even more people.

I was privileged to be part of Urban Zen’s booth at the Women’s Conference, which was a beautiful space where visitors relaxed while they waited for a complimentary 10–15 minute aromatherapy and Reiki healing session. Our space was a haven from the rest of the busy conference; I watched people visibly become more relaxed and calm as they inhaled the uplifting properties of the essential oils. We diffused Thieves® essential oil blend in an Aria™ diffuser, and the aroma carried into a majority of the enormous marketplace. Other essential oils used in the healing sessions included peppermint, frankincense, lavender, Peace & Calming®, and Valor®; in all we provided more than 120 wellness sessions throughout the entire conference!

After the Women’s Conference ended we drove to San Diego for the TEDMED conference at the Hotel Del Coronado, an annual event where the best in health care and medicine come together to share the latest ideas. Again with Donna Karan and the Urban Zen team, we created a sanctuary for healing and wellness where we offered complimentary wellness sessions using Young Living essential oils. We used a wide variety of essential oils on our visitors, including Thieves, PanAway®, Deep Relief™ Essential Oil Roll-On, Valor, Joy™, frankincense, Gentle Baby™, Grounding™, jasmine, and peppermint.

Both events were great ways to showcase how companies like Urban Zen and Young Living are bridging the gap between Western and Eastern wellness modalities. I’m proud to belong to organizations that strive to honor their stewardship to bring healing to the world.

Live Lemon Cheesecake, Nutmeg Almond Crust, Lavender Chocolate Sauce

Cheesecake is the ideal dessert to demonstrate how delicious raw cuisine can be. In order to replicate the richness, texture, and full flavor of dairy, we take a variety of soft nuts—cashews, macadamia, and pine nuts—and culture them with a probiotic: Life 5. Young Living lemon essential oil enhances the flavor of this unique nut cheese. For the crust, ground almonds with Young Living nutmeg essential oil replaces the traditional graham cracker crust. Finally, the chocolate topping is made from raw cacao, which contains a natural supply of antioxidants and is known to be one of the highest dietary sources of magnesium. Young Living lavender essential oil releases a peaceful, loving mood to make this a rich, healthful, and romantic dessert.

This Valentines Day, show your loved ones how special they are by treating them to a healthful alternative for cheese and chocolate. Nutmeg Almond Crust

1 cup almonds, soaked and dehydrated

1 tablespoon yacon or lacuma powder

1/4 teaspoon Himalayan salt

1/2 tablespoon raw virgin coconut oil

2 drops Young Living nutmeg essential oil

Grind the first three ingredients into a meal texture using a food processor. Add remaining ingredients and process until crumbly. Press mixture into the bottom of a spring-form pan. Set aside to make the cheesecake filling.

Live Lemon Cheesecake Filling

1 cup raw cashews

3/4 cup raw macadamia nuts

1/4 cup raw pine nuts

1/2 cup diced young coconut meat, water reserved for blending
1/4 cup raw solid honey

3 tablespoons raw virgin coconut oil

3 tablespoons lemon juice

1 teaspoon vanilla flavoring

4 capsules Young Living Life 5 probiotic, powder only

8 drops Young Living lemon essential oil, plus extra for plating

Combine first three ingredients and soak in filtered water for two to four hours. Drain and rinse nuts. Blend all ingredients in a Vita Mix blender. Mixture will be very thick. Add coconut water if needed for blending, but not more than three tablespoonfuls or the end result may be icy. Pour into the spring-form pan. Cover and freeze. When firm and ready to serve, remove from the freezer and immediately slice and garnish with Lavender Chocolate Sauce, fresh berries, mint, and extra drops of Young Living lemon essential oil (three to five drops per slice.

Lavender Chocolate Sauce

1/2 cup cacao powder

1/4 cup shaved cacao butter

2/3 cup grade B pure maple syrup

2 tablespoons virgin coconut oil

1 drop Young Living lavender essential oil

Pinch Himalayan salt

Blend ingredients in a Vita Mix until creamy. Serve as a garnish for cheesecake, along with fresh berries and mint leaves.
